Étienne Legault is an amateur brewer. During his foray into this hobby, he discovered the works of local microbrewers. Amazed, he toyed with the idea of opening a restaurant where guests could enjoy all these new beers.
Instead, he partnered with Audrey Martineau-Dumas who had 10 years of experience working at the Échoppe des fromages in Saint-Lambert. Audrey was familiar with the local clientele, comprised of young people between the ages of 30 to 40 years old, a dynamic, curious crowd on the lookout for niche products they could afford.
The partnership between Étienne and Audrey gave rise to them opening up a specialty store. They found an ideal location on Victoria Avenue in the heart of Saint-Lambert and Les Assoiffés opened their taps in December 2014. Since then, the enthusiasts have been flocking to their doors.
