Ingredients

  • 1 g (1/4 tsp) ground cinnamon
  • 5 g (1 tsp) rosewater
  • 15 g (2 tbsp) honey
  • 170 g (3/4 c) seedless black grapes
  • 15 g (1 tbsp) confectioners' (icing) sugar
  • 2 g (1/2 tsp) vanilla extract
  • 225 g (1 c low-fat) Greek yogourt
  • 225 g (1 c low-fat) low-fat cream cheese
  • 200 g (1 1/3 c) strawberries
  • 30 g (2 tbsp) chopped pistachios

Alternative ingredients

  • For a more tangy flavour, swap out the yogourt and cream cheese for Greek yogourt.
  • Try sliced and quartered oranges instead of grapes. Remove the bitter pith before mixing them with the cinnamon, rosewater and honey.
  • Sliced dried peaches or pears make great alternatives to the grapes. Allow two pieces of dried fruit per portion.

Directions

Preparation: 10 minutes. Serves 4.

  1. Mix the cinnamon, rosewater and honey in a large bowl. Cut the grapes in half and toss them with the honey mixture.
  2. In another bowl, lightly beat the confectioners' sugar and vanilla extract with the yogourt and softened cream cheese until smooth. Divide among four ice-cream dishes or tall dessert dishes. Level the surface of the mixture with the back of a spoon or a round-blade knife.
  3. Hull the strawberries and cut them in half, slicing any large ones into smaller pieces. Arrange the strawberries around the edge of each dish to look like the petals of a flower.
  4. Spoon the grape mixture into the centre of each portion and sprinkle with pistachios.

Chef’s tips

  • Rosewater offers a flowery flavour that goes perfectly with honey. It's usually found in the baking aisle of the supermarket.
  • If you can't buy chopped pistachios, buy whole nuts and process them in a food processor for 10 seconds, or until finely chopped.
