Blueberry muffins with lemon glaze

  • Preparation time: 20 minutes.
  • Cooking time: 20 minutes plus cooling.
  • Serves 12.

Ingredients:

Muffins

  • 500 g (2 c) self-rising flour
  • 125 g (1/2 c) granulated sugar
  • 250 ml (1 c) reduced-fat (2%) milk
  • 125 ml (1/2 c) fat-free egg substitute
  • 60 ml (4 tbsp) margarine, melted
  • 75 ml (1/3 c) sour cream
  • 10ml (2 teaspoons) vanilla
  • 375 g (1 1/2 c) fresh blueberries

Glaze

  • 250 g (1 c) sifted confectioners' sugar
  • 15 ml (1 tbsp) grated lemon zest
  • 30 ml (2 tbsp) reduced-fat (2%) milk

Instructions:

  1. Preheat oven to 200°C (400°F). Line a 12-muffin baking pan with paper liners.
  2. Whisk flour and sugar in large bowl.
  3. Whisk milk, egg substitute, margarine, sour cream and vanilla in medium bowl until blended.
  4. Make well in the centre of the flour mixture. Pour in milk mixture and stir with fork just until blended. Fold in 250 grams (1 cup) blueberries.
  5. Spoon batter into muffin cups and sprinkle evenly with remaining blueberries. Bake until toothpick inserted in centre comes out clean, about 20 minutes. Cool muffins on wire rack 10 minutes.
  6. Meanwhile, mix confectioners' sugar, lemon zest and enough milk in small bowl to make a pourable glaze. Drizzle glaze over muffins after they have cooled.
